Kombucha 2nd time circle ready
So excited!
I'm starting understanding colours, shapes, time and reactions.
Im my idea my scoby looks so healthy
Good morning all!
Today I'm writing an article about what I have done yesterday.
Yesterday it was my 6th days after starting my first fermentation for the second time with my scoby and starter liquid.
To me, this one looks an healthy scoby. Hope I'm not wrong.
But I'm striding a lot and it doesn't look like mold at all.
It looks the correct reaction the process needs to follow.
I have put the photo also with flash to see it better,.with more light!
So, I have decided to stop this fermentation and start a new one.
I tasted it in the morning around 9ish and it was tasting good.
I must confess that the dispenser is really useful in this sense.
The thickness of the layer is incredible visible to think about only 6 days of fermentation.
It's true, it's summer, so undoubtedly, fermentation is gonna be faster than winter time, but in any case I'm not in Italy right now and this week has been weak as weather.
It has never go up 20 degrees and even yesterday, temperatures were around 19 degrees.
In my idea this process has been faster than the first circle.
I believe that now the scoby has already stabilized and create its balance in its environment.
And this idea can justify the speed if the process.
I remind you that since a few days, little air bubble were visible inside the jar.
I'll try to load the video in this article.
So for me it was the perfect moment for stop this process and start a new batch.
This time I have done 2 litres of kombucha, this time I want to go something like 5 or litres because even today, I will probably not get a full bottle of 33cl.
So, based on my studies, one scoby is less important than the starter liquid, but it is important in any case.
A scoby needs to be from 20gr to 50gr per litres.
This time I scale it to know if I can grow in quantity or it will be too much for the colture.
My scoby is 104 gr πππ
I was thinking it was toooooooo small, instead 20x5=100gr. So I can do 5 little with the minimum quantity.
Probably it will be slower, less stronger, but it doesn't matter
This time I'm going to use 800ml of kombucha as a new starter liquid + plus I want to start a scoby hotel + I want to create a new scoby just in case.
After splitting all my parts, my bottle was ridiculously full that I had through all the starter liquid on the big jar.
So this time no bottle for me
I know as a starter liquid I need 100ml per litres, so 500ml were enough, but because my scoby were on the minimum limit, I just wanted to make the colture environment strong and I added more starter.
I believe at the end it has been even more than 800 but more or less, that's the quantity I count
Day 2020.06.19 h.17
The new scoby is in a beer glass, you know the classical shape of this glasses how it is.
It is narrow in the bottom and wider at the top
I want to see if the shape can compromise my scoby or not :)
Let's test it :)
It looks like something is moving and fiber are going to the top and growing
Maybe it will be successful :)
