Experimenting kombucha: creating scoby from scratch ( shop case)

Today, for the first day I saw the first sign of fermentation for creating the scoby from scratch.
You can see the finer floating on the top, I marked them up in red in the picture above.

So we can say it has taken 5 days-ish to loose its frizzy power and find its balance in the environment

2020.06.20 h. 06 situation is always the same, I'm wondering if maybe I havent put too much food for the colture.
I will make black tea for ice tea today and I'll feed it later

Ok for lunch time we have had 200ml of concentrate tea and 50gr of sugar and 200ml of water for dilution
