Ingredienti: petti di pollo, lardo, cipolle, mandorle, (eventualmente rossi d'uovo sodi), spezie, succo di limone

Per fare limonia soffriggi il pollo in lardo e cipolle. Trita le mandorle, che siano già pelate, e poi stempera con lardo di maiale, e poi mettile a cucinare assieme al pollo con spezie; e se non hai mandorle ispessisci il detto brodo con rossi d'uovo, e quando sarà ora di servire mettici succo di limoni o di limoni amari.
