Roadhouse Ribs (Instant Pot or Slow Coocker) (with Video)
Whether you cook these roadhouse ribs in the slow cooker or Instant pot, they’ll make a big hit!Twenty Minutes To Great Ribs If you have an Instant Pot, you can have these succulent pork ribs on the table in 20 minutes!That’s right! That’s all it takes since they are cooked under pressure.
I usually pressure cook my ribs for 15 minutes–that cooks them and they will hold their shape. Cooking them an additional 5-10 minutes will
give you a “fall-off-the-bone” texture. Either way is great and it’s merely a matter of taste preference. These ribs were made especially for my neighbor’s husband who is crazy for good ribs. It was the least I could do after he snowblowed my whole property after our early March blizzard!
Slow Cooking Works Too These roadhouse ribs work equally as well cooked low and slow.Put the ribs on in the morning when you leave for work, and they’re done to perfection when you get home that evening.
Beer Braise Is Delicious The braising liquid is one of the keys to these roadhouse ribs’ delicious flavor. I used a regular inexpensive supermarket lager, but you can get very
fancy just by the beer you use. They’d probably be even better if you use a dark beer or some of the fine craft ales that are available now.Onions
and garlic also infuse some yummy flavor. Get creative and add some herbs you like with pork to the braising liquid–not at all required but a
great addition if you’d like them.
Finishing Touch Either way you cook these ribs, the finishing touch is the crowning glory.You lather on the great-tasting grape jelly based sauce then either broil or grill till the sauce caramelizes.This is the only step you have to watch carefully–the caramelization happens quickly!

Ingredients
- 3lbs approx slab of baby back ribs
- Braising Liquid:
- 2 cans12 oz each beer
- 1small onion quartered
- 2cl oves garlic crushed
- Glaze:
- 1/2 cup hoisin saucesee NOTES
- 1/2 cup grape jelly
- 1 tbs worcestershire sauce -OR- soy sauce
- 2 tsp brown sugar
- 1 tbs dry mustard
- 2cl oves garlic finely minced
- 1/2 tsp hot sauce
- juice of 1 lime
Instructions
- Instant Pot/Electric Pressure Cooker :
- Remove membrane from bone side of ribs.
- Place all glaze ingredients in a small saucepan. Bring to boil and boil for 5 minutes. Remove from heat and set aside.
- Add braising liquid ingredients to Instant Pot (or any electric pressure cooker). Place ribs in pot, cutting slab in half if necessary to fit them in.
- Cook on meat setting (or high for other cookers) for 15 minutes (after pressure builds).
- Let the pot sit for 5 minutes then release pressure.
- Carefully remove ribs and spread desired amount of glaze over entire rib surface.
- Broil or grill on high heat until glaze caramelizes; about 5 minutes.
- Cut into individual ribs and serve immediately.
- Slow Cooker Method :
- Add braising liquid to crock pot. Place ribs in the liquid. Cover and cook on low 6-8 hours, high 4-6 hours (times approximate).
- Proceed as in Instant Pot method.
Notes
In a pinch, ketchup may be substituted for the hoisin sauce
