Fagioli spinaci e pecorino stagionato :) Beans, Spinach, and Aged Pecorino

Ingredients:
- 1 can of white beans (like cannellini or navy beans), drained and rinsed
- 2 cups of fresh spinach, washed and roughly chopped
- 1 cloves of garlic, minced
- 1 tablespoons of olive oil
- Salt and white pepper to taste
- 1/2 cup of vegetable broth or water
- Grated Aged Pecorino cheese
Instructions:
- Sauté the Garlic:
- Heat the olive oil in a pan over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant (be careful not to burn it).
- Cook the Spinach and the beans:
- In the pan add vegetable broth (or water), the spinach and the beans
- Let the mixture simmer for about 5-7 minutes so the flavors can meld together. If the mixture is too dry, add a little more broth or water.
- Add the Pecorino:
- Once the beans and spinach are hot and the liquid has slightly reduced, sprinkle in some grated aged Pecorino cheese. The heat will help melt the cheese and give the dish a rich flavor.
- Pack for the Workplace:
- Let the bean and spinach mixture cool slightly, then transfer it to an airtight container.
- If you prefer, pack the grated Pecorino cheese separately and sprinkle it on top before reheating your meal at work.
- Reheat and Serve:
- When ready to eat, heat your meal in the microwave until warm. Top with more grated Pecorino cheese if desired.
