Marchesi Trucioli Pasta with Saffron
Marchesi Trucioli Pasta with saffron is a composition of trucioli pasta, similar to wood chips that cover the table of carpenters, preparated with butter, lemon drops and saffron stigmas that gives the dish of red streaks and a few grains of crunchy black rice.
Ingredients
320 grams of Pasta, trucioli
80 grams of Butter
3 grams of Saffron, stigmas
20 grams of Venus black rice, crunchy
3 drops of Lemon juice
5 grams of Table salt
Preparation
1. Melt the butter in a casserole and cook over low flame, dilute the saffron stigmas, add the lemon’s drops, salt and emulsify with a little bit water.
2. Boil in a lot of salty water the trucioli pasta, drain and flavor with saffron sauce.
3. Serve, if possible in a black dish, finally scatter crunchy rice on the top.
