Couscous with Tomatoes and Rocket: Easy Workplace Preparation

Couscous with Tomatoes and Rocket
Ingredients:
- 1 cup of couscous
- 1 cup of hot water or vegetable broth
- 1 cup of cherry tomatoes, halved
- 2 cups of rocket (arugula) leaves, washed and dried
- 1 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Optional: A squeeze of lemon juice or a splash of balsamic vinegar
- Optional: Crumbled feta or shaved Parmesan cheese
Instructions:
- Prepare the Couscous:
- Place the couscous in a large bowl.
- Add a pinch of salt and pour the hot water or vegetable broth over it.
- Cover the bowl with a plate or lid and let it sit for 5-10 minutes until the couscous absorbs all the liquid.
- Fluff the couscous with a fork to separate the grains.
- Prepare the Vegetables:
- While the couscous is sitting, halve the cherry tomatoes and prepare the rocket leaves.
- Combine the Salad:
- Add the cherry tomatoes and rocket to the couscous.
- Drizzle with olive oil and add salt and pepper to taste.
- If using, add a squeeze of lemon juice or balsamic vinegar for a bright flavor, and mix well.
- Add Optional Ingredients:
- If you’re using cheese, scatter the crumbled feta or shaved Parmesan on top.
- Enjoy:
