Rice Salad with Raw Zucchini and Tomato
Ingredients:
- 1 cup cooked white rice, cooled
- 1 medium zucchini, sliced
- 2 medium tomatoes, diced
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Optional: A squeeze of fresh lemon juice or a splash of white wine vinegar
- Optional: Fresh herbs such as basil or parsley, finely chopped
Variation: instead of the rise you can use also couscous
Instructions:
- Pack for the Workplace:
- Transfer the salad into an airtight container.
- You can pack the lemon juice or vinegar separately and add it just before eating.
- Prepare the Rice:
- Cook the rice according to the package instructions. Let it cool completely before assembling the salad. This can be done the night before and stored in the refrigerator.
