Baked Potatoes with Tomatoes
Ingredients:
- 2 medium potatoes, peeled and cubed
- 1 large tomatoes, diced
- 1 tablespoons olive oil
- 1 teaspoon dried herbs (such as rosemary, thyme, or Italian seasoning)
- Salt and pepper to taste
- Optional: Garlic powder or minced garlic for extra flavor
- Optional: Fresh parsley or basil for garnish
Instructions:
- Preheat the Oven:
- Preheat your oven to 200°C (400°F).
- Prepare the Potatoes:
- Peel the potatoes and cut them into even-sized cubes.
- Place the cubed potatoes in a mixing bowl.
- Season the Potatoes:
- Drizzle olive oil over the potatoes.
- Add salt, pepper, dried herbs, and garlic (if using). Toss until the potatoes are well-coated with the oil and seasonings.
- Bake the Potatoes:
- Spread the seasoned potatoes on a baking sheet in a single layer to ensure they cook evenly.
- Bake in the preheated oven for about 25-30 minutes, or until the potatoes are golden brown and tender. Stir the potatoes halfway through the baking time.
- Add the Tomatoes:
- When the potatoes are nearly done, add the diced tomatoes to the baking sheet with the potatoes.
- Return to the oven and bake for an additional 5-10 minutes until the tomatoes are just softened.
- Pack for the Workplace:
- Allow the baked potatoes and tomatoes to cool slightly, then transfer to an airtight container.
- If you prepared a fresh herb garnish, pack it separately to sprinkle on after reheating your meal at work.
- Reheat and Serve:
- At work, you can heat the potatoes and tomatoes in a microwave until warm.
- Sprinkle with fresh herbs, if you brought some, and enjoy your hearty and comforting meal!
