Potato Gnocchi with Tomato Sauce
Ingredients:
- 1 package of potato gnocchi (about 100)
- 2 cups of tomato sauce, store-bought or homemade
- 1 tablespoons of olive oil
- Salt and pepper to taste
- Fresh basil leaves, chopped (optional)
- Grated Parmesan cheese (optional)
Instructions:
- Cook the Gnocchi:
- Bring a large pot of salted water to a boil.
- Cook the gnocchi according to the package instructions, usually 2-3 minutes until they float to the surface.
- Drain the gnocchi and set aside.
- Prepare the Tomato Sauce:
- In a large pan, heat the olive oil over medium heat.
- Pour in the tomato sauce and bring to a simmer.
- Season the sauce with salt and pepper. Let it cook for about 10 minutes, stirring occasionally. If you have fresh basil, add it to the sauce for extra flavor.
- Combine Gnocchi and Sauce:
- Add the drained gnocchi to the pan with the tomato sauce.
- Gently stir to coat the gnocchi with the sauce and heat through for a couple of minutes.
- Pack for the Workplace:
- If you're taking this meal to work, let the gnocchi and sauce cool slightly before transferring to an airtight container.
- If you like, pack some grated Parmesan cheese in a separate small container to sprinkle on top before eating.
- Reheat at Work:
- At lunchtime, microwave the gnocchi until heated through.
- Sprinkle with Parmesan cheese and additional fresh basil, if you have it.
