Ingredients:

  • 1 package of potato gnocchi (about 100)
  • 2 cups of tomato sauce, store-bought or homemade
  • 1 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh basil leaves, chopped (optional)
  • Grated Parmesan cheese (optional)

Instructions:

  1. Cook the Gnocchi:

    • Bring a large pot of salted water to a boil.
    • Cook the gnocchi according to the package instructions, usually 2-3 minutes until they float to the surface.
    • Drain the gnocchi and set aside.

  2. Prepare the Tomato Sauce:
    • In a large pan, heat the olive oil over medium heat.

    • Pour in the tomato sauce and bring to a simmer.
    • Season the sauce with salt and pepper. Let it cook for about 10 minutes, stirring occasionally. If you have fresh basil, add it to the sauce for extra flavor.

  3. Combine Gnocchi and Sauce:

    • Add the drained gnocchi to the pan with the tomato sauce.
    • Gently stir to coat the gnocchi with the sauce and heat through for a couple of minutes.

  4. Pack for the Workplace:

    • If you're taking this meal to work, let the gnocchi and sauce cool slightly before transferring to an airtight container.
    • If you like, pack some grated Parmesan cheese in a separate small container to sprinkle on top before eating.

  5. Reheat at Work:

    • At lunchtime, microwave the gnocchi until heated through.
    • Sprinkle with Parmesan cheese and additional fresh basil, if you have it.

Enjoy your homemade gnocchi with tomato sauce – it’s a classic Italian comfort food that's easy to prepare in advance and just as easy to reheat and enjoy at the office!
