>From a serious beer brewer and kegger, if you haven't yet changed out the
rubber washers, you will still have problems. Except for the big top seal,
everything is available at your favorite big-box hardware store, but pull
the dip tube and gas-in port, use a brush on both, disinfect / sanitize and
you should be good to go if there are no pits in the SS from a previous
user's employ of chlorine / Chlorox based cleaners.

The dates are set for the Portland, OR & Seattle, WA 2013 Cider Summits:
Portland - Fri/Sat June 21-22 & Seattle - Fri/Sat September 6-7. The Friday
sessions will be 3p-8p and Saturday will be 12n-6p.
If you haven't previously participated in these events and are interested,
please email me directly. Registration forms for the Portland event will
be going out soon. You can also look for updates at: www.cidersummit.com.

Another important consideration regarding a commercial market for cider
apples might be the scale of commercial cider making in your State, and
the laws governing the cider industry there and in your target market
states. Pennsylvania has protectionist rules limiting the amount of
out-of-state fruit allowed in commercially made cider, but then again
our unofficial state slogan is, "Cook with coal!"

Try contacting NABC in Mt Vernon, WA. They have done some cost analysis and
had several presentations regarding the commercial growing of cider apples
to sell to commercial cider makers. There is a growing demand for cider
fruit in the US but it is not well understood. I suspect for some
commercial growers it is going to take mind set change to produce cider
fruit. However keep in mind that the bulk of apple production in the UK and
probably France go for cider so you are not plowing new ground just
adjusting to a different business model.

UPDATE FROM THE LEGISLATIVE COMMITTEE

To Our Members:
On March 13, 2013 Senator Charles Schumer (D-NY) issued a press release
launching his proposal, the CIDER Act (Cider, Investment & Development
through Excise Tax Reduction Act) to modernize the definition of hard cider
in the Internal Revenue Code. The USACM has been in contact with our
colleagues in NY and Senator Schumer's office to assist in this initiative.
Yesterday, Senator Schumer held a press conference at Slyboro Ciderhouse in
New York, where he stated that he hopes the CIDER Act will be passed as part
of broader tax reform legislation at the end of this year. Senator Schumer
suggested that the language in the Act would be based on language in the
proposal recently adopted by the Board of the USACM.

The USACM continues to work on its members' behalf to advance the proposal
presented and adopted at the Cider Conference in February 2013. We will
inform you as this issue progresses.
In the meantime, the USACM is seeking your assistance in the following ways:
If you haven't already done so, please join the USACM, and encourage your
colleagues to do the same. Let's show Washington that the cider industry
has a united voice!
Once we know the actual content of the CIDER Act proposed by Senator Schumer,
the Legislative Committee will make recommendations to the USACM membership.
The United States Association of Cider Makers (USACM) was formed on February
6, 2013 to gather and share information about cider and perry production,
regulations concerning the production of hard cider and perry and pear
and apple growing as well as to help members improve their operations,
raise the public's awareness of cider and promote the interests of cider
and perry producers in the United States.
